Jerusalem Artichokes are a very versatile food and can be eaten raw, (sliced into salads and sandwiches); boiled, mashed, roasted or baked. They can be added to soups and stews or pureed. If you have any other ideas, please share.
I made a medicinal tincture by slicing each tuber into thin rounds and placed them in a clean jar. I covered them with vodka - but you could also use Apple Cider Vinegar - and this will sit for 6 weeks before straining out the Artichoke pieces. This medicine can be taken to benefit the digestive system, improving the liver and bile production, and replenishing the gut with prebiotic fibre. If you make a tincture using Apple Cider Vinegar, this can be used as a medicine - ie taking 5ml in a little water twice a day before meals; or you can add to salad dressings.
I also sliced and dried the tubers and we will chew one or two of these little slices each day to improve gut health.
Thank you so much for watching and I hope you have a wonderful week.

A lovely day for a herb harvest and I go around the garden gathering roses, medicinal herbs and culinary herbs. I also share my experience of the first steps on a druidic path. We are in to Autumn now and there is an abundance of wild foods and medicines still to be found. We are very blessed. We may think that our plant relatives are dying away but there is still so much to harvest. Here I am talking about just a few things that I have found in an afternoon.
Blackberries being full of Vit C, Vit A, Vit E and Vit B6, along with other powerful anti-oxidants, make a great food at this time of year and can ward off the common cold. I make jam and chutneys with them and freeze some for a treat in a pie or crumble in mid-Winter.
Nettles are one of the most wanted medicinal plants being food as well. Suddenly they are flourishing again as they do in Spring so I have gathered a bunch to make a nourishing soup. Beneficial for men, women and children they bring welcome nutrition just as we need to build ourselves up for winter.
Hawthorn berries make a wonderful tonic medicine for the cardio-vascular system, for all manner of cardiac issues. They also benefit sleep and relaxation so are very much welcome during such stressful times and when we really need to give care to our hearts - on a metaphysical level as well.

We live in a world that is often going so fast it is hard work just to keep up. (Stop! Let me off!) As a consequence many of us are feeling stressed and burned out. Fortunately there are herbs that can help and some of them are found in the garden.
The herbs I have mentioned are St. John's Wort, Borage, Catnip, Lavender, Chamomile, Vervain, Lemon Balm and Rosemary. California Poppy and Passiflora and Valerian are also very soothing. Even the humble Dandelion and Nettle are wonderful adaptogenic plants and can offer us great support.
Look below for how to make a cup of medicinal herbal tea.
I offer a lot of information about herbal remedies for the nervous system in my Introduction to Herbal Medicine course which is a six months long course that you can start at any time. To make a perfect cup of soothing medicinal tea of leaves and flowers bring your water to the boil and allow to cool for a couple of minutes so it is just off the boil. If using fresh herbs use about 2 tsps of chopped herb. If using dried herbs, about 1 tsp per cup/person. Place in your pot and cover with water. Keep on the lid to keep in the volatile oils and leave to stand or infuse for 15 to 20 mins. If you are taking the tea to help you sleep, start to prepare it about one hour before bed.
If you are using Valerian root or Dandelion root, chop finely and using the same measurements as above, place in a small pan and bring to the boil and then simmer for 15-20 mins before enjoying. It is that simple.

Thanks so much for watching. If you would like to make your own Rosehip Syrup, here is the recipe:
8ozs Rosehips- from any Rose but make sure they have not been sprayed with any chemicals.
1 Litre (2 pints) of fresh water
1 8oz jar of honey - you could use brown sugar
1 Tablespoon Brandy - optional
Muslin or cheesecloth or similar
Funnel
Place the Rosehips in a pan and cover with the water. Bring to the boil and then simmer gently until the water is reduced by half.
Strain out the Rosehips and place on compost.
Return the liquid to the pan and turn off heat.
Add the honey and stir gently until the honey has dissolved into the liquid.
Add the Brandy if desired.
Pour into clean bottles and when cooled put on the lid.
Label and keep in the fridge.
When the children go back to school, a teaspoon each morning makes a good prophylactic and if someone in the family should get sick, give a tsp three times per day for sore throat, cold and shivers, runny nose etc.
All the best and many thanks - Terri
