《酥脆炸虾球食谱秘方》
明虾 一公斤
Prawns x 1 KG
腌制秘方
胡椒粉 三汤匙
Pepper x 3 tablespoons
三茶匙的盐
3 teaspoons of salt
两汤匙的麻油
2 tablespoon of sesame oil
一汤匙的蚝油
1 tablespoon of oyster sauc
面糊秘方
自发面粉 一百三十克
Self raising flour x 130 g
两百毫升的水
200 ml of water
食用油 一汤匙
1 tablespoon of cooking oil
步骤 Step
1. 首先我们必须切除虾头,把虾壳往中间切切开,把虾线拔掉
First we must cut off the prawn heads,
Cut the prawn shell in the middle,and unplug the prawn thread
2.在把虾尾往虾的中间倒转打个结
Turn the prawn tail to the middle of the prawn to tie a knot
3.把处理好的虾清洗干净
Clean the prawns
4.加入两茶匙的盐
Add 2 teaspoons of salt
5.加入两茶匙的胡椒粉
Add 2 teaspoons of pepper
6.加入一汤匙的麻油
Add a tablespoon of sesame oil
7.加入一汤匙的蚝油
Add a tablespoon of oyster sauc
8.开始均匀的搅拌腌制
Start mixing and marinating evenly
9.依据个人的口味调整如果觉得不够味道可以在
在加一茶匙的盐,胡椒粉与麻油

10.味道调整好后,需要放置冰箱腌制五小时让明虾入味

11.准备一百三十克的自发面粉

12.两百毫升的水

13.食用油 一汤匙

15.一边搅拌一边慢慢加入两百毫升的水

醉糟鸡是福建省福州市的一道特色传统名菜,属于闽菜系-福州菜。是将肥母鸡加红糟煮熟、醉糟而成。色泽淡红,骨酥脆,肉软嫩,味道醇香,食之不腻。
在马来西亚,我们一般把醉糟鸡或红糟鸡称为红酒鸡,今天阿嬷就要来教大家如何制作这一道福州菜!阿嬷的红酒鸡更是月子餐里的必备食物,爾爾的妈咪最喜欢这一道料理了~

《红糟鸡食谱》(Red Glutinous Wine Lees Chicken)Recipe
红糟 两百克
Red Lees x 200g
姜 一百二十克
120g x Ginger
鸡 一只(一公斤两百克)
Chicken x1 (1.2kg)
自酿红糟酒 一百五十毫升
Self-brewed red lees 150ml
芝麻油 二十克
Sesame oil 20 g
一茶匙盐
1teaspoon of salt
一汤匙酱油
1 tablespoon of soy sauce
四百毫升的水
400ml of water
步骤
1.把姜屑皮切成姜丝
Cut the ginger peel into ginger shreds
2.把鸡洗干净
Wash the chicken
3.把鸡肉切成小块
Cut the chicken into small pieces
4.倒入芝麻油,用芝麻油爆香姜丝
Pour in sesame oil, saute the ginger with sesame oil
5.姜丝成金黄色后加入鸡肉煸炒
After the ginger is golden brown, add chicken and stir fry
6.加入一茶匙盐继续煸炒
Add a teaspoon of salt and continue to stir fry
7.加入两百克红糟继续煸炒
Add 200 grams of red lees and continue to stir fry
8.加入一汤匙酱油继续煸炒鸡肉

9.加入四百毫升的水

10.转小火焖十五至二十分钟

11.加入一百五十毫升的红酒
