Stuffed Mushrooms - Vegan For Life

Recipe:
1 7oz box button mushrooms
1 10oz box baby bella mushrooms
1/2 large onion
1/3 cup parsley
1 tsp savory
1/2 cup walnut
1 cup breadcrumbs
1/2 medium size fennel bulb (processed/chopped)
salt and pepper to taste
Method:
Clean mushrooms with damp cloth or paper towel. Process/chop half of button mushrooms lightly.(not too soggy) Set aside in bowl. With a small spoon scoop out the core of the rest of the mushrooms and place the cores in bowl with the processed mushrooms. Place scooped out mushrooms on plate and set aside.
Put the rest of the ingredients in bowl with mushrooms and 1/2 of the breadcrumbs for stuffing and stir/incorporate well.
Saute stuffing in pan with approx. 3-4 tablespoons of grape seed oil for 3-4 mins.
Remove from pan into a bowl. Sprinkle salt and oil on cored out mushrooms. Stuff the mushrooms. Sprinkle the tops of the mushrooms with the other 1/2 of breadcrumbs in which was added 1 tsp of savory and 1 tblsp of oil.
Bake for 15-20 mins in 350 degree oven. Enjoy!!

Green Sauce Recipe:
2 small/medium tomatillos
1 small jalapeño (roasted)
1/2 large avocado
juice of 1/2 lime
small bunch of cilantro
salt and pepper to taste
METHOD: Place all of the ingredients in blender/food processor and blend until smooth. Follow instruction on video. I also sprinkled some Dulse Granules for extra fish flavor in the mayo as show in video.
