This is an easy and delicious alternative waffle recipe. Enjoy!!
RECIPE
2 cups oat flour
1 tablespoon baking powder
1/4 teaspoon salt
1 ripe banana, mashed
1 1/2 cups milk (such as almond milk or soy milk)
1 tablespoon maple syrup (optional)
1 teaspoon vanilla extract
1 cup fresh or frozen blueberries
METHOD
Preheat your waffle iron according to the manufacturer's instructions.
In a large mixing bowl, whisk together the oat flour, baking powder, and salt.
In a separate bowl, combine the mashed banana, milk, maple syrup (if using), and vanilla extract.
Mix until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. If the batter seems too thick, you can add a little more milk to reach the desired consistency.
Gently fold in the blueberries, being careful not to crush them.
Lightly grease the waffle iron with cooking spray or a small amount of oil.
Spoon the batter onto the preheated waffle iron, spreading it evenly. The amount of batter will depend on the size of your waffle iron. Close the lid and cook according to the manufacturer's instructions, usually for about 4-6 minutes, or until the waffles are golden brown and crispy.
Carefully remove the waffles from the iron and serve them warm. You can top them with additional fresh blueberries, a drizzle of maple syrup, or your favorite vegan toppings.

This is a delicious and nutritious watermelon summer recipe
RECIPE
2 cups diced fresh watermelon
1 cup Greek yogurt
1/2 cup granola (you can use your favorite flavor)
1 tablespoon honey (optional, for added sweetness)
Fresh mint leaves for garnish
METHOD
Cut watermelon into small, bite-sized cubes and remove any seeds.
In a separate bowl, mix the Greek yogurt with honey (if using) to sweeten it slightly. You can adjust the amount of honey based on your preference for sweetness.
Take a glass or a clear bowl and begin layering the parfait. Start with a layer of the honeyed Greek yogurt at the bottom.
Next, add a layer of diced watermelon on top of the yogurt.
Sprinkle a layer of granola over the watermelon. The granola adds texture and makes the parfait more filling.
Repeat the layers until you reach the top of the glass or bowl. You can do as many layers as you like, but 2-3 layers are usually sufficient.
Finish the parfait with a final garnish of diced watermelon and a couple of fresh mint leaves on top.
Serve immediately and enjoy your delicious and nutritious Watermelon and Greek Yogurt Parfait!
