This hatch chili cornbread recipe is a keeper. Now that it's hatch chili season let's put hatch peppers in everything. Lol. This bread in particular is good with Texas Chili, Ranch style beans, or with a thick pat of butter.

Ingredients
* 1 cup flour
* 1 cup yellow cornmeal
* ¼ cup granulated sugar
* 2 teaspoons baking powder
* ½ teaspoon baking soda
* 1 teaspoon salt
* 1 large egg beaten
* ⅓ cup milk
* 6 tablespoons melted butter
* 1 cup sour cream
* 4 ounces diced green chiles
* 1 cup grated sharp cheddar cheese
Mix the dry and wet ingredients separately at first. When you mix them together make sure you don't overbeat the batter or Masa as I call it.
Have your oven preheated to 400 and bake t for 25-35 minutes or until an inserted toothpick comes out clean.

Tortas or sandwiches are just as latin as tacos. You can find them throughout South America in all manner of shapes and sizes and of course with all manner of fillings. One of my fond memories of tortas was eating them from the cafeteria at the secondary school in Delicias Chihuahua, called 20-30. (Veinte Treinta) https://www.prepa2030.com.mx/ The cafeteria offered mostly to-go foods like empanadas, burritos, cookies, and tortas. The rest of the fast food they offered was mass produced from a Company called Marinela, like gansitos, and pinguinos.
The tortas offered in my school were slathered in mayonnaise, with three slices of ham, two slices of tomato, shredded lettuce and two slices of pickled jalapeño sandwiched within a bolillo bread. The torta came wrapped in a thin wax paper and they sold for the equivalent of five cents.
In Lima, Peru there was a torta place in Miraflores my family and I liked to go to where they offered a menu full of different tortas including one with spaghetti and cheese. (I never tried that one.)
This torta is delicious. You can make it easily enough with your favorite white bread. Although the traditional torta is sandwiched in a bolillo bread I've enjoyed tortas in any bread with some sort of crust on it. i.e. like a Po' boy, or lobster roll bread.

I wanted to share with you one of my favorite recipes for crispy chicken wings done in an instant pot. When I was making this recipe I thought I would make some jalapeño rice as well. So this video is a two for one.
If you don't have an instant pot I highly recommend that you get one.
Here are the ingredientes
1 tablespoon of paprika
1 tablespoon of onion powder
1 tablespoon of garlic powder
1 tablespoon of salt
Ingredients for the jalapeño rice:
The same amount of rice as was added to the instant pot for the wings
1 teaspoon of salt
2 diced and deveined jalapeños
Add the dry brine to the chicken wings and let them set for 10 minutes.
Add a cup to a cup and a half of water to the instant pot.
Place the trivet in the bottom of the instant pot and then place the chicken wings in the instant pot taking care not to let them fall into the water.
Set the instant pot on high and the timer for 10 minutes.
Place the top on the instant pot and wait for the opt to build pressure.
When the pot beeps that it is pressurized, start preheating the oven to 450 degrees.
When the instant pot beeps alerting you that the 10 minutes has passed then release the pressure and place the wings on a lined cookie sheet.
Add a drizzle of oil to the wings and a pinch of salt.
Place the tray into the preheated oven and set timer of 12 minutes or until the wings start looking crispy.
Remove the tray when you are happy with the wings and toss them in the hot sauce.

Many of my Argentinian friends share their homemade empanadas with me but I just couldn’t wait until they made another batch so here’s my take on Empanadas Argentinas.

Dough Ingredients:
► 400 grams of flour
► 1/2 tsp salt
► 120 grams cold cubed butter
► 1 egg yolk
► 200 ml of milk
Meat filling
► 500 grams of beef
► 2 tablespoons of paprika
► 1 teaspoon of cumin
► 2 tablespoons of Oregano
► 2 tablespoons pepper flakes or powder
► Pinch of salt
► Ground fresh pepper
► 2 medium onions chopped and sautéed (sweat these)
**don’t dry the meat out
► 50g (1/2 C) Chopped Jalapeños
Directions:
Prepare the dough and set it in the refrigerator for 30 minutes. Cook the filling and set it to the side until cool for better handling. Take the dough out and roll it to 1/8th inch thick. Cut the dough into the desired shape, add the filling, and use an egg wash to seal the dough and to add an additional glaze to the pastry. Place the filled pastries on a baking sheet lined with parchment paper and place them in a preheated oven set at 200C or 390F. My empanadas were done at 20 minutes. Depending on your oven, they may take longer. Check on the color of the bread. Once they began to turn golden brown it’s time to take them out.
Let them rest a few minutes and serve.
FYI You may freeze your empanadas before the egg wash glaze for over a week for better meal preparation.

Welcome to my recipe for Buffalo Style Wings a la Gabriel Grimes. They are delicious and will leave you begging for more. I combine a spicy dry rub with a flavorful chinese chili paste and habanero sauce wet drizzle to make these wings unforgettable.

Add 1.5 cups of water of chicken broth to the instanpot and set for 10 mins. Once done, remove and plae on a lined tray and broil on high for 10 mins to crisp them up.

What I like about this pressure cooker is that I can start it and leave it alone. If it gets too hot or starts to burn the pot will stop on it's own! No more watching the pot or staying in the kitchen "Just in Case". What a time saver.

If you love Chinese dishes you must try this Sweet and Sour recipe that I found on a cool channel called Souped Up Recipes who called this dish Tang Cu Li Ji [糖醋里脊] I hope you enjoy this dish as much as I did.

► 400 grams of pork tender loin
Ingredients for the Marinade
► 1 tbsp of soy sauce
► 1/4 tsp of baking soda
► 1/4 tsp of salt
Ingredients for the batter
► 1/4 cup of all-purpose flour
► 1 egg
► 3 tbsp of water
► 1/2 tsp of baking powder
Ingredients for the sweet and sour sauce
► 1/4 cup of ketchup
► 1/4 cup of water
► 1/4 cup of sugar
► 3 tbsp of vinegar
► Slurry: 1 tbsp of cornstarch + 1 table of water
► 3/4 tsp of salt or to taste
► Some lemon zest
INSTRUCTION
► Slice the pork into thick strips. Marinate it with 1 tbsp of soy sauce, 1/4 tsp of salt, and a 1/4 tsp of baking soda. Let that sit for 20 minutes.
► While waiting for the meat, start the sauce. 1/4 cup of ketchup, 1/4 cup of sugar, 1/4 cup of water, 3 tbsp of vinegar, and 3/4 tsp of salt (or to taste). Set it to the side and wait until after the first fry.
► Make the batter with 1/4 cup of all-purpose flour, 1 egg, 1/2 tsp of baking powder and 3 tbsp of water. Mix it well.
► Put the pork into the batter. Mix. Make sure every piece of the pork is coated well. Let it sit for about 10 minutes.
► Heat the oil to 360 degrees Fahrenheit. Add the pork strips one by one. (Don’t crowd the oil.)
► Once you can see that one side is crispy. You can flip it over and fry the other side. Once both sides are done, take them out. Let it sit for a few minutes before the double fry.
► While waiting for the double fry start cooking the sauce. Stir the sauce on medium heat. Once it is bubbling, turn the heat down, add the slurry. Keep cooking it on low heat until it feels sticky but still flowing easily. Set to the side and do the double fry.
► Start the double fry. This should take a minute or maybe two ONLY. Then pour the excess oil off and get it ready for the sauce.
► Pour the sauce all over the freshly fried pork. Give it a toss and plate.
► Add scallions and toasted sesame seeds to the served plates. I enjoy eating my sweet and sour pork over rice. (Cilantro rice is the best.
