Simple Scalloped Russet Potatoes Recipe- A Very Merry Homesteady Christmas Collaboration
It's time for another video in the Very Merry Homesteady Christmas Collaboration. This weeks theme is side dishes, and we are making a simple scalloped russet potatoes recipe with our russet potatoes. This is a recipe that can be customized to to make several variations on the classic main base dish.
Recipe: 3lbs potatoes sliced 1/8" think 1 large onion diced 2 cloves garlic 1/4 cup butter 1/4 cup flour 2 cups milk 1 cup chicken broth (can substitute veggie broth) 1/2 tsp salt 1/4 tsp pepper
plus salt and pepper to taste (layered in the casserole|)
Bake at 350 for 45 minutes covered, the 45 minutes uncovered. Broil for a few minutes at the end to get a nice browned top.

Fall 2020 Carrot and Turnip Harvest.
This is likely our last big harvest from the fall of 2020, but not bad for the end of November vegetables! The kids did a great job harvesting the last of our carrot and were super excited to harvest the last of our purple topped turnip. Their reaction to eating the turnips was a bit different from the enthousiasm of harvesting them, but we are still looking forward to turning them into fermented pickled turnips here in the coming days!
Just wanted to share another harvest from the garden. It is always so amazing how much can be produced in such a small space with a bit of planning. Looking forward to 2021 growing season already!

The arctic blast blizzard continues and when you have animals its important to be prepared for things like this. But really it is pretty difficult to be prepared for this exact kind of weather so we all do the best we can. Lie on a Canadian homestead can be interesting and cold windy blizzard conditions just add to the fun during this arctic blast!

American Buff Geese Building Nest Box For Geese
Well spring is here and its time to get our American Buff Geese into their breeding pens and hopfully get them sitting on some eggs so that we get some goslings this spring! We have three pairs of geese and all six birds are completely unrelated which is a good way to start a flock of geese! In this video we walk through how we set up one of our goose pairs and show you how we build a nest box for the geese.
Hopefully we will be following up with some videos of goslings later this spring!

From Harvest to Pantry | Turning One Weekends Harvest Into Winter Food Storage
This was a fun and useful video to make. We wanted to see how one weekends harvest could be turned into winter food stores. Of course we did eat some fresh veggies from the harvest but for the most part they went into various items to be stored in the pantry. It seems like a lot of food but when you look at how much one human eats over the course of a year this is just a drop in the bucket! Good thing we have more harvesting to do!

Picking Wild Riverbank Grapes and Making Wild Grape Jelly
Today is another in the kitchen episode but it does start outside in the pasture area picking wild riverbank grapes. Why because we are making one of our favorite fall jellies, wild grape jelly!
As we often do we actually tried a little experiment to see which method tasted better, the liquid pectin recipe or the powdered pectin recipe.
Liquid Pectin Recipe:
3 cups wild grape juice
4 1/2 cups sugar
1 pouch liquid pectin
bring juice and sugar to a hard boil for 1 whole minute, then stir in pectin and remove from heat. Continue stirring and skimming for 5 minutes. Pour into sterilized jars leaving 1/2 inch headspace. Water bath Can for 10 minutes at a full boil
Powdered Pectin Recipe:
4 cups wild grape juice
4 cups sugar
1 box powdered pectin
Bring juice and pectin to a boil, stir in sugar and bring to a hard boil for one minute. Remove from heat and continue to stir and skim for 5 minutes. Pour into sterilized jars leaving 1/2 inch headspace. Process in a waterbath canner for 10 minutes at a full boil.
