* 1 cup of vegetable broth, warmed
* 1 tablespoon olive oil
* 1 small onion, finely chopped
* 2 cloves garlic, minced
* 1 small red bell pepper, diced

* 1 small yellow squash, diced
* 1 cup of arborio rice

7. Add the grated parmesan cheese and stir to combine.
8. Season with salt and pepper to taste.
9. Serve immediately, garnished with chopped fresh parsley if desired.

Seared Tuna:
* 4 oz sushi-grade ahi tuna steak
* Salt and pepper, to taste
* 1 tsp olive oil
Season the tuna steak with salt and pepper. Heat the olive oil in a non-stick skillet over high heat. Sear the tuna for 1-2 minutes on each side, or until it reaches your desired level of doneness. Set aside.
Avocado Salsa:
* 1 ripe avocado, diced
* 1/2 red onion, finely chopped
* 1 jalapeno, seeded and finely chopped
* 1/4 cup chopped fresh cilantro
* Juice of 1 lime
* Salt and pepper, to taste
Combine all the ingredients in a bowl and mix well. Season with salt and pepper to taste.
Quinoa Salad:
* 1/2 cup cooked quinoa
* 1/4 cup chopped red bell pepper
* 1/4 cup chopped cucumber
* 1/4 cup chopped red onion
* 1 tbsp chopped fresh parsley
* 1 tbsp chopped fresh mint
* 1 tbsp olive oil
* 1 tbsp lemon juice
* Salt and pepper, to taste
Combine all the ingredients in a bowl and mix well. Season with salt and pepper to taste.
To Serve:
