This hatch chili cornbread recipe is a keeper. Now that it's hatch chili season let's put hatch peppers in everything. Lol. This bread in particular is good with Texas Chili, Ranch style beans, or with a thick pat of butter.

Ingredients
* 1 cup flour
* 1 cup yellow cornmeal
* ¼ cup granulated sugar
* 2 teaspoons baking powder
* ½ teaspoon baking soda
* 1 teaspoon salt
* 1 large egg beaten
* ⅓ cup milk
* 6 tablespoons melted butter
* 1 cup sour cream
* 4 ounces diced green chiles
* 1 cup grated sharp cheddar cheese
Mix the dry and wet ingredients separately at first. When you mix them together make sure you don't overbeat the batter or Masa as I call it.
Have your oven preheated to 400 and bake t for 25-35 minutes or until an inserted toothpick comes out clean.

Have you wondered what you can do with so much meat off of a pork butt? Here are three ways to prepare your pork that will leave your family asking for more.

Ingredients:
► Pork Shoulder or Pork Butt
► 1 Tbsp of Onion Powder
► 1 Tbsp of Garlic Powder
► 1 Tbsp of Paprika
► 2 Tbsp of Salt
► 2 Tbsp of Brown sugar
► Parchment Paper
► Aluminum foil
Cooking the Pork:
Wrap the pork shoulder tightly with the parchment paper 2 times completely around one direction. Turn the pork 90 degrees and repeat for an additional 2 wraps. Repeat the parchment process with the aluminum foil. Place the meat on a baking tray and place it in an oven heated to 225 degrees Fahrenheit.
► ► Meat should be cooked using the following formula: 1:45 hours per pound
Stir fry
► Rice
► Mong Sprouts
► Sesame seed oil
► Sesame seeds
► Green onions
► Salt as needed
► Black pepper (freshly ground)
► Soy Sauce
Sandwich
► 1 Tbsp Butter
► 2 slices of Texas Toast
► 3/4 C Cheddar cheese
► 1 Tbsp BBQ sauce
► 1 Tbsp Sriracha
Burrito
► 1C Rice
► 1C Refried Beans
► 1C Cheddar Cheese
► 1 Tortilla
► Tbsp Sriracha

Enjoy this amazing recipe for beef ribs made in an instant pot and an oven. When you're stuck in the house and have a need to eat some great BBQ, this should be your GoTo recipe for amazing Beef ribs.
Dry Rub
2 tsp salt
1/4 tsp pepper
2 tsp paprika
1 tsp onion
1 tsp garlic
1 tsp mustard
1/2 tsp cayenne
1/4 cup of brown sugar
Wet ingredients
1/2 Cup of Apple Cider Vinegar
1/2 Cup of beef broth
Take the ribs out of the package and dry the ribs. Add the dry rub and place the ribs in the instant. (Don’t forget to add the Instant pot trivet.) Add the wet ingredients on the side of the pot. Avoid wetting the ribs and washing off the dry rub.
Turn the instant pot on for 25-30 minutes. (It depends on fate thickness of the meat. I usually cook them closer to 30 minutes.
Preheat the oven to 450 degrees.
Allow the instant pot to do a “slow release” for 15 minutes before taking the meat out. Add the ribs to a lined cookie tray and add BBQ sauce if you want. Place the ribs in the oven at this time for 15 minutes.
(FYI the ribs have a strong smell when you initially take the ribs out of the instant pot. :) Don’t let that scare you. The smell is normal.
After 15 minutes in the oven take the ribs out and let it rest for 10 minutes.
THEN - - Enjoy your amazing ribs.

Spanish Tortillas or as they are also known as Spanish Omelet are an easy meal to make with three ingredients you have on had in your pantry.

All you need are eggs, a potato, and an onion and you can make this exotic dish.
I went a little extra and added 2 slices of bacon and shredded cheddar cheese which is perfectly fine. Please note that you can add just about anything in this omelet and it will turn out beautifully.
***The only caveat is the cooking times. If you want to add something that needs high temperature or requires more than a couple of minutes to cook I would suggest that you cook the item first before throwing it the mix.

The Best Baby Back Ribs With the Instant Pot can be found right here. I first fell in love with baby back ribs when I was in Bogota Colombia, strangely enough.
Making Baby back ribs in the instant pot makes for a quick turnaround and a great meal. As with most barbeque, the process is two-fold. First, there is the rub and then the barbeque sauce.
The rub consists of equal portions of salt, pepper, garlic powder, paprika, and chili powder. The BBQ sauce is built from the following recipe
250 mL (1C) yellow mustard
60 mL (1/4c) honey
125 mL (/2c) vinegar
30 mL (2 Tbsp) brown sugar
15 mL (1 Tbsp) Worcestershire sauce
10mL (2Tsp) black pepper
5 mL (1tsp) salt
15 mL (1Tbsp) hot sauce

This Chicken and Broccoli Stir Fry recipe is an easy meal that’ll feed 3 and it has an out-of-this-world stir fry sauce.

Ingredients for the Chicken Marinade:
► 2 chicken thighs
► 1 tbsp of soy sauce
► 1 tbsp of water
► 2 tbsp of cornstarch
► 1/2 of egg white
► 2 tbsp of oil to stir-fry the chicken
Ingredients for the Sauce
► 2 tsp of cornstarch
► 1 tsp of grated ginger
► 1 tsp of grated garlic
► 2 tbsp of soy sauce
► 1 tbsp of oyster sauce
► 1 tbsp of brown sugar (you can use honey)
► 1/2 tsp of black pepper (can also use white pepper)
► 1 cup of chicken stock
Vegetables:
► A head of broccoli
► 2-3 carrots
Directions or Method:
➡ Debone and skin the chicken thighs. Cut them into cubes 1 inch in diameter.
➡ Combine all the ingredients for the chicken marinade and add the prepared chicken.
➡ Mix the chicken until the mixture looks silky smooth.
➡ Set it off to the side and prepare the sauce.
➡ Mix all the ingredients for the sauce and set it off to the side.
➡ Cut the broccoli into bite sizes and split them in half so there is a “flat” side.
➡ Cut the carrots into thin slices. I prefer them cut on the bias (i.e. on the diagonal).
➡ In a hot skillet add the cut broccoli. Turn the broccoli flat side down and roast until they start to brown, then turn over and continue to cook for 1-2 minutes. Place the cooked broccoli in a separate dish.
➡ Add cooking oil to a hot wok and add the chicken and it’s marinade sauce.
➡ Separate the chicken so they don’t touch each other, and let them simmer for about 3 minutes or until they began to brown. Then do a quick stir scraping the bottom of the wok to release any chicken pieces.
➡ Add the sauce. Stir the chicken to coat it with the sauce.
➡ Add the broccoli and carrots and stir to ensure all the vegetables are coated in the sauce.
➡ Sprinkle sesame seeds on the mixture.
➡ Add 1 tablespoon of roasted sesame seed oil over the mixture.
➡ Continue to cook for about 1 minute continuously stirring. (If the sauce gets too thick add a 1/4 cup of water)
➡ Take the wok off the stove and plate on a bowl of steamed rice.

Tortas or sandwiches are just as latin as tacos. You can find them throughout South America in all manner of shapes and sizes and of course with all manner of fillings. One of my fond memories of tortas was eating them from the cafeteria at the secondary school in Delicias Chihuahua, called 20-30. (Veinte Treinta) https://www.prepa2030.com.mx/ The cafeteria offered mostly to-go foods like empanadas, burritos, cookies, and tortas. The rest of the fast food they offered was mass produced from a Company called Marinela, like gansitos, and pinguinos.
The tortas offered in my school were slathered in mayonnaise, with three slices of ham, two slices of tomato, shredded lettuce and two slices of pickled jalapeño sandwiched within a bolillo bread. The torta came wrapped in a thin wax paper and they sold for the equivalent of five cents.
In Lima, Peru there was a torta place in Miraflores my family and I liked to go to where they offered a menu full of different tortas including one with spaghetti and cheese. (I never tried that one.)
This torta is delicious. You can make it easily enough with your favorite white bread. Although the traditional torta is sandwiched in a bolillo bread I've enjoyed tortas in any bread with some sort of crust on it. i.e. like a Po' boy, or lobster roll bread.

Here's a quick recipe for one. All you need is one chicken breast or thigh, a cup of rice, a cup and a quarter of chicken broth, whatever spices you have on hand, a handful of vegetables from the fridge and three tortillas.
Every good home in the South has all of those. And maybe a jalapeños or two if you're lucky.
Of course you need a pressure cooker too. I'm using an Instant pot. Here is the cooking chart for chicken when using an instant pot. Believe me, you'll want to write these down. They aren't found everywhere. For some reason people want to cook with frozen chicken and not fresh meat.
* 6-ounce chicken breasts 6 minutes on high pressure for fresh/ 10 minutes on high pressure for frozen
* 8-ounce chicken breasts 7 minutes on high pressure for fresh/11 minutes on high pressure for frozen
* 10-ounce chicken breasts 8 minutes on high pressure for fresh/12 minutes on high pressure for frozen

Southwest Egg rolls are a favorite of mine. I’ve eaten them as appetizers at multiple restaurants but I think I can make them better here at the house.
All I need is 2 chicken thighs, a package or egg roll wrappers, spinach, black beans, corn, oil, cumin and chili powder and I’ll be set.
My son ate these and asked for seconds. Since he’s been on this body building diet he hasn’t done that very often. So there you have it.
