Smoked up a great spiral cut ham.
Used mustard as the binder on the ham.
Cover Spiral Ham with just Brown Sugar.
Let the Char-Griller get up to a god stead heat
Put Spiral Ham in Te Char-Giller 980
Smoked until internal temp reach 135 and put on a coat of glaze. Added another coat of glaze to the Ham about 5 minutes later.

Smoked Meatballs on the Pit Boss Pro Series 1100 using Bisquick as the binder. Smoked them until internal temperature of 165 and pulled them off.......pretty good....should have cooked them about 10 minutes less......

Got 3 nice small London Broils to smoke on the Pit Boss 1100 Pro Series for the holidays.
But some Worcestershire sauce on as a binder and then coated them liberally with salt, pepper, garlic powder and onion powder.
Had the Pit Boss set to the Smoke setting at P7.
Let them smoke for 2 hours and then turned the Pit Boss up to 300 to finish them off...(should have wrapped them) but wanted to try it without the wrap.
Did put some German Beer & Worcestershire Sauce on them to keep the moist.
Once they were at least 135 degrees internal temp, pulled them off and wrapped them up in foil for 30 minutes to rest.
And the rest was a great dinner for the night.

Trying to smoke a chuck roast on the pit boss to make some great pulled beef. It turned out tasting really great but was not that easy to pull part. First time to try this out so I will make it better next time.
4+ Pound Chuck Roast
Used Worcestershire for the binder and then applied some Jack Daniels Beef Rub.
Had the Pit Boss heated up to 250 degrees. Let it smoke for about 2.5-3 hours until internal temp stalled out at about 155-160.
Wrapped in chuck roast in foil with worcestershire and beef broth and turned the Pit Boss up to 300 degrees.
Kept it going until the internal temp was between 205-210, should have let it go higher. Then pulled off and let it rest in a cooler for about 1 hour, should have let it rest for about 2 hours. Pulled it apart and had a great dinner.
