This recipe is perfect for a healthy and delicious lunch or dinner. The secret ingredient - Honey - adds a touch of sweetness that balances out the spices and flavors in the dish. Enjoy!
RECIPE:
1 can of chickpeas, drained and rinsed
1 red onion, finely chopped
1 red bell pepper, chopped
1 cucumber, chopped
1/4 cup of chopped parsley
1/4 cup of chopped mint
1/4 cup of olive oil
2 tablespoons of lemon juice
Salt and pepper to taste
2 salmon fillets
1 teaspoon of paprika
1 teaspoon of garlic powder
1 teaspoon of cumin
1 teaspoon of chili powder
1 tablespoon of butter
Secret ingredient: 1 tablespoon of honey
METHOD:
In a large bowl, mix together the chickpeas, red onion, red bell pepper, cucumber, parsley, mint, olive oil, lemon juice, salt, and pepper. Set aside.
In a small bowl, mix together the paprika, garlic powder, cumin, and chili powder. Rub the spice mixture onto the salmon fillets, making sure to coat both sides.
Heat the butter in a pan over medium-high heat. Once the butter has melted, add the salmon fillets and cook for 3-4 minutes on each side, or until the salmon is cooked through.
Once the salmon is cooked, remove it from the pan and let it rest for a minute. Then, flake the salmon into bite-sized pieces and add it to the chickpea salad.
Finally, add the secret ingredient - the honey - to the chickpea salad and mix everything together until well combined.
Serve the chickpea salad with the pan-fried Salmon. Enjoy!
