How To Make Chicken Lo Mein Simple Recipes That Make You Feel Good
This comfort food is my go-to right after fried rice. All I need is a piece of chicken (we'll use the chicken breast this time) egg noodles, soy sauce, oyster sauce, an onion, garlic and ginger.
By the way, I've made this with spaghetti noodles too. They work when you're in a pinch. :)
This hatch chili cornbread recipe is a keeper. Now that it's hatch chili season let's put hatch peppers in everything. Lol. This bread in particular is good with Texas Chili, Ranch style beans, or with a thick pat of butter.

Ingredients
* 1 cup flour
* 1 cup yellow cornmeal
* ¼ cup granulated sugar
* 2 teaspoons baking powder
* ½ teaspoon baking soda
* 1 teaspoon salt
* 1 large egg beaten
* ⅓ cup milk
* 6 tablespoons melted butter
* 1 cup sour cream
* 4 ounces diced green chiles
* 1 cup grated sharp cheddar cheese
Mix the dry and wet ingredients separately at first. When you mix them together make sure you don't overbeat the batter or Masa as I call it.
Have your oven preheated to 400 and bake t for 25-35 minutes or until an inserted toothpick comes out clean.

Spanish Tortillas or as they are also known as Spanish Omelet are an easy meal to make with three ingredients you have on had in your pantry.

All you need are eggs, a potato, and an onion and you can make this exotic dish.
I went a little extra and added 2 slices of bacon and shredded cheddar cheese which is perfectly fine. Please note that you can add just about anything in this omelet and it will turn out beautifully.
***The only caveat is the cooking times. If you want to add something that needs high temperature or requires more than a couple of minutes to cook I would suggest that you cook the item first before throwing it the mix.

Chicken Thighs with Mexican Street Corn
Chicken is a a protein we many times overlook. Besides Pork it is the most readily available protein in may grocery stores and the one that graces most company dinner menus. But it don’t have to be boring.
In my mind a boring piece of chicken is one that is forgettable or worse yet is dry-as-a-bone inedible. This can be remedied many times by choosing the right piece of the chicken. “THE THIGH”.
It is by far the most juicer piece of the bird and for many beginner cooks you will find that it is the most forgiving. In other words you can overstep your cooking and the piece will still be delicious.
Another piece to the puzzle is the crispy skin. It adds an additional layer of texture that makes us like it more. We are wired to believe that “Crispy is delicious”.
As for the Mexican Street Corn, it’s a beautiful side dish that adds some brightness and color to the brown chicken and gravy. :) It’s easy to make and taste like you had to work really hard to get the flavors where you like them.
Here are the INGREDIENTS:
3 chicken thighs - with skin and bone-in
1 onion
3 cloves of garlic (minced) (2 tsp)
2 cups of frozen corn
2 cups of chopped jalapeño
BUTTER - about 4 tablespoons
1 cup of beer
1 cup of heavy cream
2 tsp paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp salt
1 tsp black pepper (freshly ground)
1 red chili pepper powder
Juice of half of a lime

The Famous Breakfast burrito....I've been told that I eventually turn everything into a burrito. lol So I figured I'd share my breakfast burrito with you.
All you need is the following:
A potato
Eggs
Chorizo
onion
Bacon
Tortilla
Serrano Peppers
Avocado
It took me an hour to film this but it only takes 20 minutes to make. If you skip the potatoes it'll take less than 10. Swap the potatoes with rice or refried beans just to mix it up.
This is my go-to breakfast when I don't have too much time but I'm starving.

Southwest Egg rolls are a favorite of mine. I’ve eaten them as appetizers at multiple restaurants but I think I can make them better here at the house.
All I need is 2 chicken thighs, a package or egg roll wrappers, spinach, black beans, corn, oil, cumin and chili powder and I’ll be set.
My son ate these and asked for seconds. Since he’s been on this body building diet he hasn’t done that very often. So there you have it.

After some research i believe the word “micas” comes from the Spanish word “Migajas” which means bits and pieces or crumbs. And this recipe is great for left over tortillas and whatever else you have in the refrigerator.
For those who are curious migas and chilaquiles are similar. The difference is that chilaquiles have a red or green sauce and are baked.
Ingredients:

7 Mushrooms
1/4 Red Bell Pepper
1/4 White Onion
1 small can of chopped green peppers
Grated cheddar cheese
