This hatch chili cornbread recipe is a keeper. Now that it's hatch chili season let's put hatch peppers in everything. Lol. This bread in particular is good with Texas Chili, Ranch style beans, or with a thick pat of butter.

Ingredients
* 1 cup flour
* 1 cup yellow cornmeal
* ¼ cup granulated sugar
* 2 teaspoons baking powder
* ½ teaspoon baking soda
* 1 teaspoon salt
* 1 large egg beaten
* ⅓ cup milk
* 6 tablespoons melted butter
* 1 cup sour cream
* 4 ounces diced green chiles
* 1 cup grated sharp cheddar cheese
Mix the dry and wet ingredients separately at first. When you mix them together make sure you don't overbeat the batter or Masa as I call it.
Have your oven preheated to 400 and bake t for 25-35 minutes or until an inserted toothpick comes out clean.

Here's a simple and a "go-to" recipe for beef short ribs made in an instant pot. I did this recipe is less than one hour from start to finish and the beef ribs came out flavorful and fall-off-the-bone delicious.
The following are the ingredients for the recipe:
2 tablespoon oil
2 tablespoons Salt
1 tablespoon of Fresh cracked black Pepper
1 teaspoon Onion Powder
1 teaspoon Garlic Powder
3-4 Short Ribs
1 tomato
1 Jalapeño
1 Onion
4 Garlic cloves
5 stalks Celery
1 Carrot or parsnips
1 Bay leaf
1.5 cups Chicken broth
0:00 - Intro
0:40 - Mise en place
1:21 - Brown the meat
2:21 - Deglaze with chicken broth
3:35 - Add the vegetables
4:00 - Add the beef
4:24 - Set the Instant pot to 45 mins
4:51 - Making the slurry with water and cornstarch
5:05 - Remove the beef and the vegetables. (toss the veges)
5:31 - Return the juice to the pot bring to a boil and add the slurry to create the gravy
6:08 - Plating the beef short ribs on a plate of jalapeño rice
6:30 - Outro
6:40 - The Bite
Using the Instant pot, saute the salted meat 3 mins on each side in the vegetable oil.
Throw in the diced vegetables and the broth. deglaze the bottom of the instant pot.
Add the meat to the mixture and seal the pot leaving it to cook for 45 minutes on medium.
Remove the vegetables and add 2 tablespoons to the sauce to thicken it up for the gravy.
Place the meat on a bed of rice, pour the gravy over the meat and enjoy.

I love making all sorts of rice recipes. Rice is a simple recipe and as long as you remember to cook rice in a sealed container, don't peek you'll make amazing rice.

I use a VitaClay https://vitaclaychef.com/ which is a clay pot that is sealed in an electric slow cooker. If you don't have a VitaClay you will need a sauce pan with a lid.

Here's the recipe:
Cilantro Lime Rice
Ingredients
1 Cup of rice (I prefer Jasmine Thai rice. It's more fragrant and adds another layer of flavor to the rice.)
1 Cup of cilantro (or one bunch)
1 Cup of water
2 Tbsp of olive oil
1 Tsp of Himalayan salt
1 Lime (Juice of one lime)
2 cloves of garlic
Instructions
Rinse the rice under cold running water until the run-off water is clear.
Peal and chop a clove of garlic.
Add a tablespoon of oil, salt, the water, chopped garlic and the rice to the VitaClay or Sauce pan.
** If you are using a saucepan you will need to bring the mixture to boil. Then you must turn the heat as far down as possible and cover the pan with its lid and wait for 17-18 minutes.
In the VitaClay all you need to do is press the "rice" button...nice isn't it? lol
While the rice is making...peal the other clove of garlic, add it, the cilantro, the fresh juice of the lime and the remaining tablespoon of oil into the food processor. Blend it into a paste.
Once the VitaClay beeps, telling you it's finished, open the pot and add the Cilantro paste to the rice and mix gently so as not to break the rice.
**If you are using a saucepan, once you've reached 17 minutes check the rice. It should be flaky. Add the cilantro paste to the rice and mix gently so as not to break the rice.
Serve hot and enjoy. This recipe makes 4 cups of cooked rice.

This Chicken and Broccoli Stir Fry recipe is an easy meal that’ll feed 3 and it has an out-of-this-world stir fry sauce.

Ingredients for the Chicken Marinade:
► 2 chicken thighs
► 1 tbsp of soy sauce
► 1 tbsp of water
► 2 tbsp of cornstarch
► 1/2 of egg white
► 2 tbsp of oil to stir-fry the chicken
Ingredients for the Sauce
► 2 tsp of cornstarch
► 1 tsp of grated ginger
► 1 tsp of grated garlic
► 2 tbsp of soy sauce
► 1 tbsp of oyster sauce
► 1 tbsp of brown sugar (you can use honey)
► 1/2 tsp of black pepper (can also use white pepper)
► 1 cup of chicken stock
Vegetables:
► A head of broccoli
► 2-3 carrots
Directions or Method:
➡ Debone and skin the chicken thighs. Cut them into cubes 1 inch in diameter.
➡ Combine all the ingredients for the chicken marinade and add the prepared chicken.
➡ Mix the chicken until the mixture looks silky smooth.
➡ Set it off to the side and prepare the sauce.
➡ Mix all the ingredients for the sauce and set it off to the side.
➡ Cut the broccoli into bite sizes and split them in half so there is a “flat” side.
➡ Cut the carrots into thin slices. I prefer them cut on the bias (i.e. on the diagonal).
➡ In a hot skillet add the cut broccoli. Turn the broccoli flat side down and roast until they start to brown, then turn over and continue to cook for 1-2 minutes. Place the cooked broccoli in a separate dish.
➡ Add cooking oil to a hot wok and add the chicken and it’s marinade sauce.
➡ Separate the chicken so they don’t touch each other, and let them simmer for about 3 minutes or until they began to brown. Then do a quick stir scraping the bottom of the wok to release any chicken pieces.
➡ Add the sauce. Stir the chicken to coat it with the sauce.
➡ Add the broccoli and carrots and stir to ensure all the vegetables are coated in the sauce.
➡ Sprinkle sesame seeds on the mixture.
➡ Add 1 tablespoon of roasted sesame seed oil over the mixture.
➡ Continue to cook for about 1 minute continuously stirring. (If the sauce gets too thick add a 1/4 cup of water)
➡ Take the wok off the stove and plate on a bowl of steamed rice.

I used the recipe posted on Tastemade channel. And this is what came out of my kitchen.

The process was easy and the ingredients were readily available at my local grocery store (shout out to HEB in Texas). The house smelled like a Nestle Toll House Chocolate chip Factory for 3 hours after I finished. FYI if there are people on a diet they might want to leave to watch a movie while you cook these. Lol
What I would do differently would be to use a smaller pan. The recipe calls for a 9X13 but I think a 9X11 or even 9X10 would work. This will allow for more cookie dough on the bottom of the pan. Also, I wouldn't use the entire can of the sweetened condensed milk.
Salted Caramel Chocolate Chip Bars
SERVINGS: 12
INGREDIENTS
* 250g unsalted butter, at room temperature
* 1 cup packed light brown sugar
* 1/2 cup granulated white sugar
* 2 large eggs
* 1 teaspoon vanilla extract
* 1 teaspoon kosher salt
* 1 teaspoon bicarb soda
* 2 1/2 cups all-purpose flour
* 2 cups dark chocolate chips
* 396g sweetened condensed milk
* 10 ounces soft salted caramel candy, unwrapped (about 40 pieces)
INSTRUCTIONS
1. Preheat the oven to 350 degrees F. Line a 9x13-inch baking pan with foil and coat liberally with cooking spray.
2. In a large bowl, use an hand mixer to combine the butter and both sugars on medium speed for 2 minutes until fluffy.
3. Add the eggs, vanilla, salt and baking soda and continue mixing until smooth, scraping the sides of the bowl as necessary.
4. Turn the speed to low and add the flour until combined. Stir in the chocolate chips.
5. Press half the dough into the prepared pan.
6. Add caramels and sweetened condensed milk into a large microwave safe bowl. Microwave for 20 seconds at a time, mixing each time until smooth.
7. Pour the caramel mixture on top of the dough in the pan and drop the remaining dough evenly in teaspoon-size amounts on top of the caramel.
8. Bake for 25 to 30 minutes, until the centre is just set.
9. Allow to cool completely in the pan before cutting into bars. #Yummy
