https://www.paypal.me/PolitifeastI wanted to do this salad platter after my talk because one of the ingredients in this salad - watercress - it decreases the risk of obesity and diabetes. Watercress is something I eat everyday. It is so refreshing and it contains over fifteen minerals and vitamins. It is a good thing to eat for balance and to beat diabetes.
Here is the recipe for this refreshing greens and avocado salad. All organic ingredients
1 bunch of watercress
1 small bunch of romaine lettuce
2 small kirby cucumbers or any cucumber you can find
1 small container/pint of cherry of grape tomatoes
4 avocados
1 medium red onion
1&1/2 cups cilantro/culantro (you can use both or either)
juice of 10 key limes approx 1/4 cup (If you do not have key limes use regular organic limes)
1/4 cup grapeseed oil or olive oil
salt and red pepper to taste
Method
Wash greens thoroughly and spin the salad spinner to remove excess water. If you do not have a salad spinner, place in very clean kitchen towel and remove excess water.
Lay out the greens on your platter as I explained. Chop cucumber to your liking and place over greens.
Mix lime juice, oil, salt and pepper in separate bowl. Set aside.
Chop cilantro/culantro, onions, and tomatoes and place in bowl. Peel avocados and chop in chunks. Add avocados to the bowl with tomatoes etc. Pour oil dressing in the bowl with avocados and tomatoes etc. Mix lightly and well.
Place avocado salad in the middle of your green salad platter.
