Sausage Gravy Recipe:
-1 lb breakfast sausage
-1/4 cup all-purpose flour
-2 cups milk half & half, heavy whipping cream, evaporated milk
-Black pepper to taste -
-pinch sugar
1. Brown sausage and season liberally with black pepper.
2. Sprinkle flour over the cooked sausage and stir.
3. Let flour cook for 1-2 minutes and then gradually add milk, stirring as you pour.
4. Bring gravy to a simmer and let thicken.
5. Add a pinch of sugar and continue stirring.
Biscuit Recipe
-3 cups all-purpose flour
-3 tbsp sugar
-1/2 tsp salt
-4 tsp baking powder
-1/2 tsp cream of tartar
-3/4 cup COLD butter
-1 egg
-1 cup whole milk
Instructions
1. Preheat oven to 450 degrees.
2. The secret to excellent biscuits is COLD BUTTER. Really cold. Many times the biscuit dough gets worked so much that the butter softens before the biscuits even go in the oven. Try cutting the butter into small pieces and stick back in the fridge pulling out only when ready to incorporate into the dough.
3. Combine the dry ingredients in a large bowl.
4. Use a pastry cutter to cut cold butter into flour mixture. Don't go too crazy here - you want to see small, pea-sized pieces of butter throughout the dough.
5. Add in the milk and egg and mix just until the ingredients are combined. The dough will be sticky but don't keep working it. You should be able to see the butter pieces in the dough.
6. Turn the dough out onto a generously floured surface. Sprinkle some flour on to the top of dough so it won't stick to your fingers and knead 10-15 times. If the dough is super sticky just sprinkle on some additional flour.
7. Pat the dough out to 3/4 - 1 inch thickness and cut with a biscuit cutter or glass. I ended up with nine this time but depending on who is snacking on biscuit dough, I can get up to 12 biscuits.
8. Place the biscuits on a lightly greased baking sheet or parchment lined baking sheet and bake for 10 to 15 minutes or until golden brown on top.
9. For extra deliciousness, brush the tops of the biscuits with melted butter.

We join our nephew Joe in the kitchen to make one of our family’s favorite recipes: Pop-Up pancakes. This dish also goes by the name of “Dutch Babies” or “German Pancakes”. This is a staple dish in our family that our kids love to eat for breakfast-for-dinner. It is a great recipe if you have lots of eggs you need to use.
Recipe
6 eggs
1 cup milk
1 cup flour
4-6 tbsp butter
Preheat oven to 400 degrees.
Beat eggs and milk until smooth.
Blend in flour until smooth.
Slice butter and put on baking sheet, either 12x16 or 9x13.
Place in oven to melt butter.
When butter is melted make sure to cover the entire bottom of pan with the butter.
Blend any extra butter into batter.
Pour batter into pan and place pan into preheated oven.
Cook for 15-20 mins or until batter pops up.
Serve warm with powdered sugar, syrup, berries or desired topping.

We move the cows from one pasture to another to prevent overgrazing. There are always those groups of outlier cows who are weary of our process and do not cooperate. Our dog Bear tries to lend a hand in herding them.

We branded 8 calves. There are a couple different methods ranches use for branding the cows. We use the chute when we have a small crew. We were able to round up some family and friends to help us and our neighbor (who is a traditional cowboy through and through) was able to rope the cows for us.
Branding is a method of identifying a cow as belonging to a specific livestock owner (to prevent theft and to identify lost cows); it is also required by law in some states. We try to work quickly to reduce the discomfort to the cow. Watch our “Prepping for Branding” video for some more in-depth information about branding.

We do some firearm training, go over basic firearm safety and techniques as Shannon shoots a pistol for the first time.
We prepare for all kinds of scenarios and dangers on the ranch. The closest hospital, police or firefighter can be 30 minutes to an hour away. We have to really promote self-sufficiency and be able to handle different scenarios. We have to protect ourselves and our animals against predators.
