I had a great time using my instant pot and grilling on my Kamado Joe this Fourth of July. I made my famous Beef Shortribs. This hatch chili cornbread recipe is a keeper. Now that it's hatch chili season let's put hatch peppers in everything. Lol. This bread in particular is good with Texas Chili, Ranch style beans, or with a thick pat of butter.

Ingredients
* 1 cup flour
* 1 cup yellow cornmeal
* ¼ cup granulated sugar
* 2 teaspoons baking powder
* ½ teaspoon baking soda
* 1 teaspoon salt
* 1 large egg beaten
* ⅓ cup milk
* 6 tablespoons melted butter
* 1 cup sour cream
* 4 ounces diced green chiles
* 1 cup grated sharp cheddar cheese
Mix the dry and wet ingredients separately at first. When you mix them together make sure you don't overbeat the batter or Masa as I call it.
Have your oven preheated to 400 and bake t for 25-35 minutes or until an inserted toothpick comes out clean.

I love making all sorts of rice recipes. Rice is a simple recipe and as long as you remember to cook rice in a sealed container, don't peek you'll make amazing rice.

I use a VitaClay https://vitaclaychef.com/ which is a clay pot that is sealed in an electric slow cooker. If you don't have a VitaClay you will need a sauce pan with a lid.

Here's the recipe:
Cilantro Lime Rice
Ingredients
1 Cup of rice (I prefer Jasmine Thai rice. It's more fragrant and adds another layer of flavor to the rice.)
1 Cup of cilantro (or one bunch)
1 Cup of water
2 Tbsp of olive oil
1 Tsp of Himalayan salt
1 Lime (Juice of one lime)
2 cloves of garlic
Instructions
Rinse the rice under cold running water until the run-off water is clear.
Peal and chop a clove of garlic.
Add a tablespoon of oil, salt, the water, chopped garlic and the rice to the VitaClay or Sauce pan.
** If you are using a saucepan you will need to bring the mixture to boil. Then you must turn the heat as far down as possible and cover the pan with its lid and wait for 17-18 minutes.
In the VitaClay all you need to do is press the "rice" button...nice isn't it? lol
While the rice is making...peal the other clove of garlic, add it, the cilantro, the fresh juice of the lime and the remaining tablespoon of oil into the food processor. Blend it into a paste.
Once the VitaClay beeps, telling you it's finished, open the pot and add the Cilantro paste to the rice and mix gently so as not to break the rice.
**If you are using a saucepan, once you've reached 17 minutes check the rice. It should be flaky. Add the cilantro paste to the rice and mix gently so as not to break the rice.
Serve hot and enjoy. This recipe makes 4 cups of cooked rice.

Ingredients
* 1 cup (8oz/240g) butter, melted and cooled to room temperature
* 1¼ cup (10oz/300g) brown sugar
* ¾ cup (6oz/180g) white sugar
* 2½ cups (12½oz/375g) all-purpose flour
* 1 teaspoon salt
* 1 teaspoon baking soda
* 2 large eggs
* 2 teaspoon vanilla extract
* 2 generous cups of semi-sweet chocolate, (or rough chopped chocolate from a bar)
Instructions
1. Whisk the flour, salt, and baking soda in a medium bowl. Set aside.
2. Whisk both sugars in a large bowl and make sure to break up any large chunks. Add the melted butter and whisk vigorously for about 1 minute, until light fluffy and fully incorporated.
3. Whisk in one egg to the sugar-butter mixture, stirring until it's fully mixed in. Scrape the sides of the bowl with your spatula. Whisk in the second egg and the vanilla and scrape the sides of bowl again.
4. Add the dry ingredients to the wet and stir with the spatula to fully combined. Chill the dough for a minimum of 30 minutes to 2 hours before scooping.
5. Using a quarter scoop measure scoop the cookie dough base into roughly 19 cookies.
6. When ready to bake preheat the oven to 375ºF (185ºC). Place the cookies on a larger parchment lined cookie sheet about 4 inches apart. Bake for 10-12 minutes until you can still see it is doughy in the center but browning around the edge. Resist the urge to bake for longer as you will over bake it and lose that gooey center.
8. Let cool on the sheet for 5 minutes then enjoy. Store in an air tight container for up to 3 days). Place the cookies on a larger parchment lined cookie sheet about 4 inches apart. Bake for 10-12 minutes until you can still see it is doughy in the center but browning around the edge. Resist the urge to bake for longer as you will over bake it and lose that gooey center. #Yummy

Let's make a curry chicken and rice in a cast iron skillet. That's right... One skillet, because I don't want to wash so many pots and pans.
