Tasty and satisfying Shrimp Scampi with Broccoli
RECIPE
1 pound large shrimp, peeled and deveined
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup unsalted butter
3 garlic cloves, minced
1/2 cup white wine
1/2 cup chicken broth
2 tablespoons freshly squeezed lemon juice
1/4 teaspoon red pepper flakes
1/4 cup chopped fresh parsley
1 head Broccoli
METHOD
In a small bowl, combine the flour, salt, and pepper. Coat the shrimp in the flour mixture and shake off any excess.
In a large skillet over medium heat, melt the butter. Add the garlic and cook for 1 minute, stirring constantly.
Increase the heat to medium-high and add the shrimp to the skillet. Cook for 2-3 minutes on each side, until pink and cooked through. Remove the shrimp from the skillet and set aside.
Add the white wine to the skillet and bring to a simmer. Cook for 2-3 minutes, until the liquid has reduced by half.
Add the chicken broth, lemon juice, and red pepper flakes to the skillet. Simmer for 5-7 minutes, until the sauce has thickened slightly.
Return the shrimp to the skillet and toss to coat in the sauce. Add the chopped parsley and stir to combine.
You can also serve the shrimp scampi over cooked linguine or spaghetti.

Green Sauce Recipe:
2 small/medium tomatillos
1 small jalapeño (roasted)
1/2 large avocado
juice of 1/2 lime
small bunch of cilantro
salt and pepper to taste
METHOD: Place all of the ingredients in blender/food processor and blend until smooth. Follow instruction on video. I also sprinkled some Dulse Granules for extra fish flavor in the mayo as show in video.

R E C I P E
1 cup each of kamut/spelt flakes
or 2 cups brown spelt flour
pinch of salt
1/3 cup brazil nut milk,
2 tsps vanilla
1/4 cup agave syrup
1/4 cup melted butter or coconut oil
1/4 cup perrier (optional)
CINNAMON SUGAR RECIPE:
2 tsps cinnamon powder
2 tblsps date sugar
METHOD
Process kamut and spelt flakes. You will have less flour after processing. 1 1/3 cups so you have to add 2/3 cups of spelt flour to make 2 cups of flour. Mix all your wet ingredients and add to flour and knead thoroughly. (Add more flour if necessary if dough is too wet)
Since I did this video as an experiment, I would advise after careful consideration that you do not add the perrier - hence optional. You do not need any leavening agent in this recipe. This cinnamon toast crunch needs to be crunchy so when milk is added it does not fall apart. Also the dough needs to be rolled out 1/16th (very thin) of an inch for better results. I showed you the difference in size. Mine was a little less than 1/8 of an inch.
Roll out dough into an oblong shape - the size of a standard sheet pan. Use a pizza cutter or knife to define your crunch size as shown. Poke with fork for design and also to prevent dough from rising when baking. Bake at 350 degrees for 15-20 mins or until your desired crunch is achieved. Good Luck!!

This Crispy Chicken Tenderloin dipped in milk or yogurt egg mixture and special Ingredient will surely satisfy your chicken craving.
Recipe:
Ingredients:
1 pound chicken tenderloins
1 cup all-purpose flour
1 tsp paprika
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
2 eggs
1/4 cup milk or 1/2 cup plain yogurt
2 cups panko breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup Dijon Mustard (special ingredient)
Light Olive oil for frying
METHOD:
Wash, dry and season tenderloins with salt and black pepper or you can add salt and pepper with other dry ingredients for breading.
In a small bowl, mix together the flour, paprika, garlic powder, salt, and black pepper.
In another bowl, whisk together the eggs, milk or yogurt and mustard
In a third bowl, mix together the panko breadcrumbs, Parmesan cheese
Dip each chicken tenderloin first into the flour mixture, then the egg mixture, and finally the panko mixture, making sure to coat each piece well. Fry tenderloins for 4-5 minutes on each side until golden brown. Remove and drain on paper towel.
2nd Method for Cooking Chicken:
Place the coated chicken tenderloins on a baking sheet coated with cooking spray or oil.
Bake in the preheated 375 degree oven for 20-25 minutes, or until the chicken is cooked through and the coating is golden brown and crispy.
Serve hot with your favorite dipping sauce.
