Sweet and Sour Meatball Recipe - A Very Merry Homesteady Christmas Collaboration Today is the last dish in the collaboration and that is the main dish!

In the Kitchen San Marzano Fermented Tomato Salsa
Time for another of our favorite recipes this time a fermented tomato salsa made from our San Marzano tomatoes.
Recipe:
6lb Tomatoes
1lb red onion
1lb sweet peppers
4 jalapenos
12 garlic cloves
2 cups cilantro
4 tbsp sea salt
1 tsp cumin
Mix all ingredients and fill jars. Place your weight on and a fermentation lid. store in a cool dark place for 3-5 days pending your tastes, then enjoy! I find this salsa does keep well in the fridge, but it gets more liquid over time.

Today we are canning apple syrup a favorite in our house. We are fortunate to have an abundance of apples and in addition to juice the syrup we make from the apples is a welcome addition to the pantry. This is not only a simple recipe but a tasty way to preserve an abundance of apples for later use!

From Harvest to Pantry | Turning One Weekends Harvest Into Winter Food Storage
This was a fun and useful video to make. We wanted to see how one weekends harvest could be turned into winter food stores. Of course we did eat some fresh veggies from the harvest but for the most part they went into various items to be stored in the pantry. It seems like a lot of food but when you look at how much one human eats over the course of a year this is just a drop in the bucket! Good thing we have more harvesting to do!

It's time to get cleaning some Icelandic sheep fleece. This time we are cleaning the fleece outside to see if we can speed up the process a bit and get multiple sheep fleece cleaned during the warm weather. We also have a new toy and we will be testing a new swing picker to help process our Icelandic sheep fleece. This new swing picker is going to really help us get our yearly fleece processed and reduce the wear and tear on our two fleece carders.

Recycled or reclaimed Sheep Barn Build - Part 1 we are building again! This time we needed somewhere to put some of our Icelandic sheep to get them separated into breeding groups. So the solution was to use recycled material around the yard to build the sheep barn.
So the other night we did some brainstorming to see how we could get this done both quickly and cost effectively. And this was our solution, a small 8x12 foot structure built out of several reclaimed/recycled materials that either came with the property or that we had been saving from other projects.
This build will use a bit of new material but the bulk of the build has been reclaimed/recycled materials. So far by the end of the first day (and this video) we have spent about three (3) hours on the build so not to bad! Anyways stay tuned for part 2 to see how we do with this!

Food shortages does feeding chickens compete for food resources? That's a pretty big question to be asking ourselves as homesteaders. Hopefully this video on feeding chickens and some of the dilemmas is food for thought or thought for food as it were.

Sheep shearing is a routine part of keeping any breed of sheep kept for their fleece. Our Icelandic sheep are no exception. We are a bit old school and use hand tools for shearing our sheep on the homestead. Using Eggshells For Plants In The Garden Planting The Seedlings out!
A few weeks later and the buttercrunch lettuce that was planted in the eggshells is big enough to go out in the garden! And while we were out in the garden we also managed to harvest our first radishes of 2021 and are excited to see how they taste!
